Summer Dinner


When I was growing up we would often have salad Nicoise for dinner on summer nights. Sometimes we would use tuna, but the best was when we had leftover salmon and would have that on top.

Last week we had a bit of a heat wave, and when I invited Jane and Andrew for dinner, Nicoise seemed the perfect meal. Unfortunately, my platter wasn't big enough to hold the fish AND the salad, but I think it came out beautifully! For dessert, I made icebox cake... yum!
